Melt your butter in a small frying pan

Mix self-raising flour, baking powder, olden caster sugar and a pinch of salt together in a large bowl

In a separate whisk together the eggs, melted butter and milk

Pour the dry ingredients mixture into the wet mixture and beat until you have a smooth batter using a whisk or fork. Don't over mix.

Heat a small knob of butter and 1 tsp of oil in a large, non-stick frying pan over a medium heat

Pour in rounds of the batter using a ladle, roughly 10 cm wide. Judge how many at a time by your pan size

Cook until the top of pancakes have some bubbles, this should be around 1 minute
