Butter/grease and line a 23cm / 9 inch springform tin with baking paper

Preheat the oven to 180°C / 160°C fan / gas mark 4 / 356°F

Pour the Guinness into a large saucepan and add the butter, cut into cubes or slices, to help it melt

Put the saucepan on medium heat until butter melts, then remove from heat

Whisk in the cocoa and sugar

In a small bowl, pout in the sour cream, eggs and vanilla and beat/mix with the whisk

Sieve in the flour and bicarbonate of soda into the mixture, whisking again until smooth

Pour into lined tin, and bake until risen and firm. This took 55 minutes for us, but the guide is to check after 45

Once risen and firm, leave in the tin on a wire rack to cool completely

Lightly whip the cream cheese until smooth

Sieve over the icing sugar and cornflour and then mix/beat to combine

Add the double cream and whisk until you have a spreadable consistency. A hand whisk will do this in seconds, or a couple of minutes by hand
