Ingredients: 4 tbs / 4 tbs Olive Oil; 1 / 1 Garlic Clove; 1 / 1 Lemon; 170 g / 6 Oz Frozen Peas; 60 g / 2.12 Oz Chopped Walnuts; 60 g / 2.12 Oz Parmesan cheese; 1 tbs / 1 tbs Fresh Mint; 1 pinch / 1 pinch Salt and Pepper

Originally made this as part of another recipe, but works amazingly well on it's own. We used the left overs to stir through some pasta and a sprinkle of parmesan cheese. It was so easy to do, especially using frozen peas. It's also really nice on some toast with a poached egg for brunch. A more traditional way would be to use pine nuts rather than walnuts.
