Heat the milk over a medium heat in a large pan until just beginning to simmer

Add your sugar, cornflour and vanilla into a large bowl

Separate the egg yolks from the whites, placing the yolks in their own bowl

Whisk in the egg yolks to the sugar mixture in the large bowl until you have a smooth paste

Whilst whisking the egg and sugar mixture, gradually pour the hot milk into the bowl

Clean the pan of any solids at the bottom

Return the mixture back to saucepan using a spatula

Stir over the low heat, using the whisk and spatula. Keep the bottom of the pan moving or it might catch and you get brown. Continue until it thickens, which is just before the mixture simmers

Pour the custard bowl, cover the surface with clingfilm so it doesn't get a skin and leave to cool
