Bring water to the boil in a medium saucepan

Cook the spelt in boiling water until tender

Half and squeeze the juice from the lemon

Peel and crush a garlic clove

Mix together the buttermilk, honey, sugar, crushed garlic clove and olive oil

Chop the cooked Beetroot into matchsticks

Heat the rest of the regular olive oil in a pan

Cook the onion in the pan for 5 minutes until they start to soften
